Join us February 8 at 5pm to celebrate local, Michigan brews and farms! Le Cheile is teaming up with Speciation Cellars to bring you a five-course, hyper-local menu, featuring Speciation beer pairings:
First Course: King Salmon
Beet-cured salmon, roasted celeriac,
heirloom carrot, Cranberry Incipient gastric
Pairing: Cranberry Incipient
Second Course: Winter Greens
Swiss chard, kale, celery leaves, watermelon radish,
roasted carrots & shallots, house cider vinaigrette
Pairing: Speciation Cider
Third Course: Porchetta
Underbru-infused porchetta, braised collard greens,
roasted butternut squash
Pairing: Underbru Saison
Fourth Course: Smoked Chicken
Cherry wood-smoked chicken thigh,
chestnut mushroom & orca bean ragu
Pairing: Michigan Fuzz
Fifth Course: Basque Cheesecake
Roasted sweet potato, chevre, honey
Pairing: Macaronage Sour
The meal will feature produce, proteins, and other ingredients from local farmers and producers. When developing our menus, we do our best to consider common allergens and restrictions, while staying true to the ingredients and their farmers.
